Pineapples are perfect for relish, as they're sweet yet tart at the same time.

⤃250-gram fresh pineapple
⤃250-gram fennel
⤃1 onion
⤃¹/₈ liter vinegar
⤃100-gram sugar
⤃½ bunch of dill

Method of preparation

Peel and dice the pineapple. Wash the fennel and dice it as well, then peel and dice the onion.
Put the diced pineapple, fennel and onion into a saucepan together with the vinegar and the sugar and bring to the boil. Lower the temperature and let the relish simmer for about 10 minutes until it reaches the desired consistency.
Wash, dry and finely chop the dill and fold it into the relish. Let the relish cool down before serving.
