Been looking for ways to make potatoes interesting. Found it at last. Full of flavor. Delicious. It didn't object to being allowed to cool and then reheating. Will be using again.
250 gram potatoes or sweet potatoes
2 table spoon vegetable oil
1 onion, thinly sliced
1 ½ fresh root ginger, finely chopped
1 clove garlic, crushed
1 ½ tea spoon curry powder or chili powder
1-2 table spoon sesame seeds.
|Method of preparation|
|Peel the potatoes and cut into cubes.|
|Season the potato cubes with salt, then heat the oil in a pan and cook the potatoes for 10 minutes, turning frequently to cook evenly.|
|Add the onion, ginger, garlic and curry powder to the potatoes.|
|Add about ½ cup water to the pan and stir to mix. Cover and cook for 10-12 minutes, stirring occasionally, until the potatoes are cooked and tender.|
|Taste and adjust the seasoning and serve immediately, sprinkled with sesame seeds.|
